1 16 oz. can pumpkin
2 cups sugar
1 cup vegetable oil
4 eggs, lightly beaten
2 cups flour
2 tsp. soda
1 tsp. cinnamon
½ tsp. salt
Beat pumpkin, sugar, and oil. Add eggs; mix well. Combine dry ingredients, and add to pumpkin mixture, and beat until well-blended. Bake in a greased 15 x 10 in. pan at 350 for 25-30 minutes.
Frosting: (or stir in 1 1/2 cups mini chocolate chips and sprinkle with cinnamon sugar before baking)
3 oz. cream cheese, softened
5 Tbs. butter or margarine, softened
1 tsp. vanilla
1 ¾ cups powdered sugar
3-4 tsp. milk
Chopped nuts, if desired
Combine frosting ingredients and frost cooled cake. Sprinkle with nuts, if desired.
