Chicken Tortilla Roll-ups

¾ cup sour cream
6 (8 inch) flour tortillas
1 ½ cups diced cooked chicken or turkey
1 cup finely shredded cheddar cheese
1 cup shredded lettuce
½ cup chopped ripe olives
½ cup chunky salsa

Spread 2 tbs. sour cream over each tortilla. Toss remaining ingredients together, and fill each tortilla; roll tightly. Wrap in plastic wrap. Refrigerate until serving. Note: sour cream may be left off for a low fat option.
