Chocolate Oatmeal Cake

This is the one with the coconut frosting.

1 cup oatmeal
1 ½ cup boiling water
½ cup shortening
1 ½ cups sugar
2 eggs
1 tsp. vanilla
¼ cup cocoa
1 tsp. baking soda
 2 tsp. salt
1 cup flour

Topping:
1 cup powdered sugar
2 Tbs. butter
½ cup milk
2 cups coconut

Soften oatmeal in boiling water.  Combine shortening, sugar, eggs and vanilla.  Combine dry ingredients.  Add to creamed mixture; mix well.  Mix in oatmeal, and bake in a greased 8 x 12 in. pan at 350 for 35 minutes.  Combine topping ingredients in medium saucepan, and boil, stirring,  until thick, about six minutes.  This is a very moist cake.
