3 cans (15.5 oz. each) great northern beans, rinsed and drained
4 cups water
2 cans (15 oz. each) garbanzo beans, rinsed and drained
1 can (16 oz.) corn
1 can (15 oz.) crushed or diced tomatoes, undrained
1 can (11 ½ oz.) condensed bean and bacon soup, undiluted
1 can (10 oz.) diced tomatoes and green chilies, undrained
1 medium onion, chopped
1 medium green pepper, chopped
1 tsp. chili powder
1 tbs. dried parsley flakes
1 tsp. ground cumin
2 bay leaves
In a large soup pot, combine ingredients. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Discard bay leaves. Sprinkle with cheese.
