1 cup uncooked quinoa
1 red bell pepper, sliced
1 green bell pepper, sliced
1 onion, sliced
2 chicken breasts, chopped
1/2 cup BBQ sauce whisked with a cup of water
Preheat oven to 375. Pour quinoa in a greased 9×13 pan. Add peppers, onion, and chicken. Sprinkle with garlic salt. Pour BBQ sauce mixture over the top. Bake for 1 hour or until chicken is cooked through.
