2 Tbs olive oil
1 large onion, chopped
3 cloves garlic, minced
2-3 cups cubed sweet potatoes
1 bell pepper, chopped
2 Tbs chili powder
2 tsp ground cumin
1 tsp oregano
2 cans cannellini beans
2 cups chicken broth
1 cup frozen corn
2 cups cooked chicken
3/4 tsp salt
1/4 tsp pepper
Combine first 5 ingredients and cook for 6 minutes. Then add spices and cook 1 min. Add broth and beans. Simmer gently for 15 mins. Add corn, chicken, salt and pepper and cook for 2 more minutes.
Serve with sour cream and gauc.
