1 onion, chopped
1 garlic clove, minced
2 can (14 1/2 oz each) chicken broth
1 package (8 oz) cheese tortellini
1 can (12 1/2 oz) Italian stewed tomatoes
1 package (10 oz) frozen chopped spinach, thawed and drained (or wilted a bag of fresh spinach)
1/2 tsp black pepper
In a large greased saucepan, saute the onion and garlic until tender. Add broth; bring to a boil. Add tortellini; reduce heat. Simmer for 10 minutes or until tortellini is tender. Stir in the tomatoes and spinach; heat through. Serve immediately.
